An Apple A Day

I found a great new cake recipe—and fat-free too. No butter or oil at all. I was surprised when I read it, and thought for sure there was an error in the cookbook. It’s rare to find a cake recipe with no fat at all. I took a chance and baked it as written. Well, the apples and baking powder must handle the cake’s moisture and fluffy texture, while the baking power does the lifting.
With no fat at all, this dessert has to be healthful and low-cal. What could be better? It has very little flour to speak of, and no butter or oil has to mean something. The apple has only 95 calories, plus lots of vitamins, minerals and fiber.
The best part is that it just took minutes to mix up and bake. It’s one of the easiest cakes I’ve ever made. It was also nice to have all the ingredients on hand with no special shopping necessary.
While it was baking, the apple and cinnamon fragrance filled my kitchen, and I couldn’t wait to taste it. I let it cool and held off until that evening after dinner. We had a slice for dessert. Wow, it was absolutely perfect and delicious. The combination of the fruit and spice all came together beautifully, and for me this recipe is a keeper.
Apple Walnut Cake
2/3 C sifted all-purpose flour
1-1/2 C granulated sugar
3 t baking powder
½ t salt
1 t cinnamon
2 eggs, well beaten
3 t vanilla extract
2 C diced apples
1 C chopped walnuts

Preheat oven to 350º
Grease and generously flour a 5 x 10 x 2 baking pan or glass dish.
Sift together flour, baking powder, salt and cinnamon. Beat the eggs thoroughly and gradually add the sugar and vanilla. Toss the dry ingredients with the apples to coat them, and gradually add to the egg mixture. Beat thoroughly after each addition.
Pour into the prepared pan and bake 45 minutes. Cool and serve. A scoop of vanilla ice cream would be good on the side, but it was still delicious all by itself.
